Today’s #mbfeb prompt is banana, so I’m sharing my favourite way to eat banana: mashed into baked oatmeal! If you’d like to try the same, my recipe derives from BudgetBytes' Banana Bread Oatmeal, but I add ~25g chia seeds and a squirt of stevia instead of the sugar πŸ˜›

Why does food look more appealing when it’s colourful? Is it some kind of evolutionary adaption because in nature, colours = fruits and vegetables? πŸ€” Regardless, I enjoyed the bowl of fried rice with prawns I made last night. #mbfeb

Tonight I decided to make gnocchi with chicken sausages in a butternut squash sauce πŸ˜‹ If you’re interested in trying it yourself, I follow this Skinny Taste recipe! #mbfeb

As I’ve mentioned before I no longer eat mammal meat, which is mostly easy peasy but just occasionally I get the craving for some ham or bacon. Now there are vegan (wheat protein-derived) imitations in the supermarket, I can once again treat myself πŸ˜‡ (Day 7 #mbfeb prompt.)

Just sharing a photo of the chicken tacos I made the other night, cos they came out very photogenic πŸ˜… (and delicious! πŸ˜‹) The supermarket did try to thwart me by not having any fresh coriander in stock. I used the semi-dried stuff instead, which wasn’t ideal, but didn’t ruin it.

Tonight I cooked Colombian chicken and rice, using this recipe from Skinnytaste. It says you can use turmeric instead of annatto seeds, but (not to sound snobby…) I wouldn’t recommend it. Order annatto online if you have to, cos it makes the whole dish πŸ‘πŸ»

Five years ago I decided to stop eating mammal meat, and while this has mostly been no hardship, one thing I have missed is ham and cheese croissants. The other day I saw these vegan ham slices on the supermarket shelf, and today I finally gave them a try. They’re perfect 😍
